Feels Like Fall

This dinner was one I threw together with what I had in the fridge at the time. It turns out, it is the perfect fall meal. Mangiamo!

Fall Dinner

Yields: one servings

Ingredients:

  • 3 rounds from Delicata Squash Recipe here

  • 1 cup Spinach

  • 1/4 cup Spicy Roasted Chickpea Recipe here

  • 1/4 cup Avocado, diced

  • 1/4 cup Sweet Potato, diced and roasted
