Discover Something New

I have to admit, when I first saw these in the grocery store I was unaware that they tasted so good. This gorgeous fall vegetable is known as the Delicata Squash and tastes something like a mix between a butternut squash and a sweet potato. I have to say it is probably my new favorite fall vegetable. It has such good flavor that I wanted to keep this recipe plain and simple. This dish will pair well with any protein. Hurry, run out to your local store and try this delicious vegetable before the season ends. Mangiamo!
