The Best Vegetarian Sandwich

I mean look at that color! Mangiamo!

Hummus Veggie Sammy

Yield: 1 serving

Ingredients:

  • 2 slices Whole Wheat Bread

  • 2 tbsp Hummus (my favorite is the roasted red pepper)

  • 3-4 leaves Butter lettuce

  • 1/4 cup Shredded Carrots

  • 1/2 Avocado, Sliced

Directions:

  1. Spread hummus on slices of bread.

  2. Top with veggies, slice in half and enjoy!
