Do Buddhas Do It Better?

Teriyaki Buddha Bowl

Yields: one serving

Ingredients:

  • 1 medium sweet potato

  • 2 tbsp olive oil

  • ¼ cup teriyaki sauce

  • ⅓ cup brown rice (favorite: trader joe’s frozen brown rice)

  • ⅓ cup edamame (favorite: trader joe’s frozen, shelled edamame)

  • ½ avocado

  • Salt and pepper to taste

Directions:

  1. Preheat oven to 400 degrees F.

  2. Wash, peel and cut sweet potato into cubes.

  3. Drizzle olive oil over sweet potatoes and sprinkle with salt and pepper.

  4. Place sweet potato on baking sheet and bake in oven for 30-40 minutes or until sweet potato is soft. Stir/flip potatoes halfway through baking.

  5. While sweet potatoes are baking, cook brown rice according to package directions.

  6. If edamame is frozen, cook according to package directions.

  7. Once everything is done cooking, place in a bowl and enjoy.
