I have to admit, when I first saw these in the grocery store I was unaware that they tasted so good. This gorgeous fall vegetable is known as the Delicata Squash and tastes something like a mix between a butternut squash and a sweet potato. I have to say it is probably my new favorite fall vegetable. It has such good flavor that I wanted to keep this recipe plain and simple. This dish will pair well with any protein. Roasted Delicata Squash
Ingredients:
1 Delicata Squash
2 tbsp Olive OIl
Salt and Pepper to taste
Directions:
Preheat oven to 400 degrees F.
Wash and slice squash into rounds.
Once sliced, remove the middle part of the squash that contains the seeds.
Drizzle olive oil over squash and season with salt and pepper.
Bake in the oven for 20 minutes, flipping squash over halfway through.
