Who said you can't have pizza for breakfast? I found myself craving Avocado Toast one Sunday morning but wanted to do something different with it. Instantly, I thought of breakfast pizza. It seemed like the perfect combination, just like peanut butter and jelly. So off to Trader Joe's I went. While planning out the rest of my grocery list, on the way there, I tried to figure out a way to incorporate more vegetables into the dish. This is something I do pretty much at every meal and snack. I try to see how many vegetables I can add to each. Sometimes I can add an additional 2-3 vegetables and other times none but it makes me feel better that I at least took the time to think about it. Anyways...back to the pizza. I had the genius idea of using Trader Joe's cauliflower pizza crust instead of traditional flour crust and thus this recipe was born. Mangiamo!

Breakfast Pizza
Yields: 4 servings
Ingredients:
Trader Joe's Cauliflower Pizza Crust
2 Avocados
Salt and pepper to taste
1 tbsp Olive Oil
2 Eggs, fried
2 oz Shredded Cheddar Cheese
Red Pepper Flakes
Directions:
Cook cauliflower crust according to package instructions.
While crust in cooking, peel and slice avocado and place in bowl. Once in bowl mash avocado and add salt and pepper to taste.
When crust is done cooking, about 15-20 minutes, remove from oven and top with mashed avocado.
Heat oil in a skillet. Once heated add eggs and cook according to preference (I do not like runny eggs so I cook mine through the whole way). For tips on how to make the perfect fried egg head on over to this post.
Right before eggs are done cooking split cheese evenly between the two eggs and sprinkle on top.
Once eggs are done cooking, place on top of pizza and sprinkle red pepper flakes all over pizza.
