I love a good fried egg especially thrown over a salad or on a sandwich with some avocado. Many people fear the fried egg because they believe it to be difficult to make without breaking the yolk. I personally do not enjoy a runny yolk so I break mine on purpose but the best way to make the perfect fried egg is to go fast and don't hesitate. When you go to flip the egg, be confident and move quickly. Now it may take a try or two but I guarantee that once you get the hang of it you will be making the perfect fried eggs in no time. Below is a recipe I threw together one day based on what was left in my fridge. Mangiamo!

Fried Egg Bowl
Yields: one serving
Ingredients:
1 tbsp Olive oil (for extra spice use the baklouti olive oil from My Favorites)
1 Egg
Salt and Pepper to taste
1 cup Spinach
1/2 cup Sweet Potatoes, roasted
1/4 cup Cashews
Garnish with Parmesan cheese and Sriracha
Directions:
Heat skillet over medium heat. Once heated add olive oil and heat.
Once oil is heated add egg to pan and season with salt and pepper.
Let egg cook for a few minutes on one side and then flip over and allow cooking for a few more minutes.
Add spinach, sweet potatoes, fried egg and cashews to a bowl.
Sprinkle cheese over top and add your desired amount of sriracha.
