You know the age old saying, "breakfast is the most important meal of the day" well there is some truth to that. Research shows that those who eat breakfast tend to consume fewer calories, throughout the day, than those who skip breakfast. When choosing a breakfast make sure to include a lean protein source (egg, greek yogurt, chicken, fish, turkey). Protein will aid in keeping you full throughout the morning. This is one of my go to, easy, quick and simple breakfast recipes. Mangiamo!

Open Faced Power Breakfast Sandwich
Yields: 1 serving
Ingredients:
1 slice whole wheat toast or for those who are vegan or gluten free you can use a slice of sweet potato as the "toast"
1 tbsp olive oil (I like to use spicy olive oil, my favorite is here)
1 egg, fried
Salt and pepper to taste
1/2 Avocado, sliced
Sriracha or favorite hot sauce to taste
Directions:
Toast bread or sweet potato "toast"
While toasting, heat a skillet over medium heat. Once skillet is warmed, add olive oil.
Once oil is warmed, add egg. Add salt and pepper to taste while egg is cooking.
While egg is cooking, slice avocado.
Once done cooking, top toast with egg, avocado and sriracha
