I often times find myself craving buffalo chicken even though I do not eat chicken. One day I had this epiphany of making a buffalo chicken salad but instead of chicken using chickpeas. It was the highlight of my week. Mangiamo!

Buffalo Chickpea Salad
Yield: 1 serving
Ingredients:
1/2 cup Chickpeas, drained and rinsed
2-3 tbsp Buffalo Wing Sauce
1.5 cups of Spinach
¼ cup Green Bell Pepper, chopped
¼ cup Tomato, chopped
2-3 tbsp Avocado, sliced
Ranch dressing to taste
Directions:
Toss chickpeas in buffalo wing sauce.
Combine spinach, chickpeas, pepper, tomato and avocado in a bowl.
Drizzle your favorite ranch dressing and enjoy.
