Vegetarian Buffalo?

I often times find myself craving buffalo chicken even though I do not eat chicken. One day I had this epiphany of making a buffalo chicken salad but instead of chicken using chickpeas. It was the highlight of my week. Mangiamo!

Buffalo Chickpea Salad

Yield: 1 serving

Ingredients:

  • 1/2 cup Chickpeas, drained and rinsed

  • 2-3 tbsp Buffalo Wing Sauce

  • 1.5 cups of Spinach

  • ¼ cup Green Bell Pepper, chopped

  • ¼ cup Tomato, chopped

  • 2-3 tbsp Avocado, sliced

  • Ranch dressing to taste

Directions:

  1. Toss chickpeas in buffalo wing sauce.

  2. Combine spinach, chickpeas, pepper, tomato and avocado in a bowl.

  3. Drizzle your favorite ranch dressing and enjoy.
