Colorful Carbohydrates

Now this is what I call a salad. Mangiamo!

The Most Colorful Salad

Yields: 1 serving

Ingredients:

  • 1 cup Spinach

  • 1/4 cup Bell Peppers

  • 1/4 cup Red Cababge

  • 1/4 cup Butternut squash strings

  • 1/4 cup dried Chickpeas (my favorite ones are here)

Directions:

  1. Throw it all on a plate or in a bowl and enjoy!
