Tomato Tart
Yields: Serving size depends on how tart is cut, great for a party appetizer
Ingredients:
1 package of phyllo dough
3-4 heirloom tomatoes
¼ cup olive oil
1 ¼ cups ricotta cheese
1 tbsp lemon zest
Salt and Pepper to taste
Directions:
Heat oven to 400 degrees F. Line a baking sheet with parchment paper.
Lay one sheet of phyllo dough on the parchment paper and brush with olive oil. Top with another sheet and repeat this process until the entire package of phyllo dough is used.
In a mixing bowl, combine ricotta, lemon zest, salt and pepper.
Slice heirloom tomatoes.
Spread ricotta mixture on phyllo dough then top with sliced tomatoes.
Bake in the oven for 30 minutes until dough is golden brown and flaky.
