Vegetarian Pho

This was my first time trying pho and it did not disappoint! This recipe is not a traditional pho however, it is my take on pho. There are so many dishes that I love the idea of but don't necessarily love all of the ingredients. This doesn't mean that I can't enjoy the recipe. I tailor the dish to my dietary needs and preferences. If you ever see a recipe but do not like certain ingredients, take some out, add some in, do whatever you have to do to make it your own. Mangiamo!

Vegetarian Pho

Yields: 4 servings

Ingredients:

For the broth

  • 1 tbsp olive oil

  • 1 clove of garlic, minced

  • 4 cups vegetable stock

  • 3 tbsp Sriracha

  • 1/4 cup Soy Sauce

For the bowl ingredients

  • 1/2 package of Rice Noodles (I used this brand pictured above)

  • 1 package of Trader Joe's frozen, shelled edamame

  • 2 large Carrots, peeled (keep peels for inside bowl)

  • 1 Red Bell Pepper, thinly sliced

  • 1/4 cup Green Onions, chopped

Directions:

  1. In a sauce pan heat olive oil over medium heat.

  2. Once oil is heated add garlic and cook for 1-2 minutes.

  3. Add the remaining broth ingredients and cook until heated throughout.

  4. While broth is heating, add water to another pot and boil.

  5. Once boiling, add edamame and cook for 4 minutes.

  6. While edamame is cooking, slice bell pepper, chop green onion and peel carrot. Set aside.

  7. When edamame is done cooking, remove from stove and drain.

  8. Rinse pot and fill with 3/4 of the way with water. Place pot on the stove and boil water.

  9. Once water is boiling, add half of the rice noodles and cook for 3 minutes.

  10. When rice noodles are done cooking, remove from the stove and drain.

  11. Assemble your bowl by placing the rice noodles in first, then the bell pepper, carrot and edamame. Sprinkle green onions on top and pour your broth into your bowl.
