Sweet potatoes are my favorite food and I always try to find new ways to enjoy them. Lately, I have been enjoying stuffed sweet potatoes because of their versatility. For example, you can do a greek stuffed sweet potato or a Mexican stuffed sweet potato like this one. This is a great way to add extra vegetables to your meal as well as a lean protein. Taco Stuffed Sweet Potato
Yields: one serving
Ingredients:
1 Sweet Potato, baked
2 oz Shredded Mexican Cheese
1/4 cup Red & Green Cabbage ( I use the Red & Green Cabbage with Orange Carrots Mix from Trader Joe's)
1/2 Avocado, sliced
Directions:
Preheat oven to 400 degrees F.
Wash and pierce the sweet potato with a fork and place in the oven on a baking sheet.
Bake sweet potato until tender, typically takes about 45-60 minutes.
Once sweet potato is done, remove from oven and allow to cool for a minute or two.
Cut potato in half and fluff the inside of each half with a fork.
Sprinkle cheese on top of each half and then add remaining ingredients (cabbage mixture and avocado).
Optional: sprinkle paprika and cayenne pepper on top. For extra protein add your favorite cooked beans to the potato.
