Black bean burgers with a side of sweet potato fries are possibly my favorite indulgent meal. I am very picky about the type of black bean burger because a lot of them have fillers in them. I like to make my own because I can control what goes into and how it tastes. They may seem intimidating to make but this recipe took less than 30 minutes to make. Mangiamo!

Black Bean Burger with Spicy Cabbage Slaw
yields: 4 burgers
Ingredients:
For the burger
2 cans Black beans, rinsed and drained
1/2 Yellow Onion, diced
1/2 cup Breadcrumbs
1 egg
pinch of garlic powder
1/8 tsp salt
1/8 tsp black pepper
2 tbsp butter or oil of choice
1/2 Avocado, sliced
For the slaw
2 tbsp lime juice
1 tbsp Sriracha
pinch of sugar
1 cup Trader Joe's shredded red and green cabbage with orange carrots
Directions:
Drain and rinse the black beans and then place them in a mixing bowl.
Mash beans to desired consistency.
Once beans are mashed add in yellow onion, breadcrumbs, egg, garlic powder, salt and pepper. Stir to combine.
Once combined, portion patties to desired size ( I made 4 large burgers but you could make smaller ones or even bit size appetizers).
Once portioned, heat a skillet on medium heat and add butter once heated.
Place each patty in the skillet and cook until golden brown on each side and heated through. I used butter to cook the patties because it created the golden, crisp texture that I like but you could use any oil of your choosing.
While patties are cooking, in another mixing bowl combine lime juice, sugar and Sriracha. Once mixed add in cabbage and stir to coat evenly.
After patties on done cooking, remove from stove and top with sliced avocado and spicy cabbage slaw.
